We love hearing how our customers use SAVAGE BEE-CHES honey in their kitchens—and sometimes, we get really lucky. Our dear customer @foreldet recently picked up a jug of our lush Meadowfoam Honey and turned it into something truly magical: Pumpkin Bread two ways.
She not only shared her recipe, she also brought us two whole loaves to enjoy with our neighbors and friends at Lost Cities Beads. Trust us—this recipe tastes like a warm hug: decadent and cozy, yet simple enough to whip up on a weeknight.
Best of all, she gave us two recipe versions: one indulgent and one a bit lighter. We highly recommend trying both!
✨ Version 1: Classic Pumpkin Bread with Meadowfoam Honey
Serves: 8–12
Prep Time: 15 minutes
Cook Time: 45–60 minutes
Ingredients:

2 cups all-purpose flour
-
1 can (15 oz) pumpkin purée
-
1 ½ sticks butter, melted
-
1 ½ cups SAVAGE BEE-CHES Meadowfoam Honey
-
½ tsp salt
-
3 tbsp pumpkin pie spice
-
¼ tsp baking powder
-
1 tsp baking soda
Directions:
-
Preheat oven to 325°F.

In one bowl, mix all the dry ingredients.

In another, combine wet ingredients (melted butter, pumpkin, and honey).

Gradually mix dry ingredients into the wet until fully combined.

Pour into a greased loaf pan or muffin tin.

Bake for 45 minutes to 1 hour (shorter if using muffin tin), until a toothpick comes out clean.
🌿 Version 2: Healthy Pumpkin Muffins
Serves: 12
Prep Time: 10 minutes
Cook Time: 23 minutes
Ingredients:

1 ⅓ cups coconut oil, melted
-
1 ½ cups SAVAGE BEE-CHES Meadowfoam Honey
-
1 can (15 oz) pumpkin purée
-
¼ cup almond milk
-
2 eggs
-
2 ½ cups oat flour
-
1 tsp baking soda
-
3 tbsp pumpkin pie spice
-
1 tsp vanilla extract
-
Optional: chocolate chips, nuts, or dried fruit
Directions:

Preheat oven to 325°F.

Melt coconut oil and combine with honey in a large bowl.

Stir in pumpkin purée, almond milk, eggs, vanilla, baking soda, and spices.

Fold in oat flour until smooth.

Pour into muffin tins (lined or greased).

Bake for 23 minutes, or until muffins are golden and set.

Add your favorite extras like chocolate chips or chopped nuts for a fun twist!
