We are preparing an early-access preorder for bourbon barrel-aged meadowfoam honey at SAVAGE BEE-CHES®. The full batch is approximately 90 jars total, but only approximately 30 jars are being offered for preorder. The remaining jars are being reserved for gifting and events.

This is the honest version: the honey is fresh, it has not been bottled yet, we have just selected the specialty 12-ounce jar, and the minimal labeling is still being finalized and ordered. The release is in progress, not finished.

Meadowfoam honey is already a rare find

Meadowfoam honey is not generic honey wearing a fancy outfit.

It comes from the nectar of Limnanthes alba, a Pacific Northwest flower associated with Oregon’s Willamette Valley and nearby growing regions. The bloom is brief. Production is limited. Availability shifts from year to year.

The flavor is the reason honey people remember it.

Our Oregon Meadowfoam Honey is known for its distinctive marshmallow-and-vanilla character. Think toasted marshmallow, soft vanilla cream, warm butterscotch, and a delicate bakery sweetness.

It is sometimes called “s’mores honey” for good reason.

Meadowfoam does not hit you with the dark molasses intensity of buckwheat. It does not bring the herbal snap of eucalyptus. It is softer, creamier, and more confectionery. It tastes like honey wandered into a pastry kitchen and came back with excellent manners.

That makes it a natural foundation for a barrel-aged specialty honey.

Why bourbon barrel aging changes the conversation

Let’s be clear about what this is.

This is not commodity honey poured into a cute container and described with dramatic adjectives. This is a behind-the-scenes specialty release in development. We are taking an already distinctive varietal and giving it time with the character of oak from a bourbon barrel.

That matters.

The honey has been aging in oak for months, and we are currently offering tastings at the boutique so people can try it before deciding whether to reserve a jar. That is the kind of transparency I care about. Taste first. Ask questions. Then decide whether it belongs in your kitchen, on your gift table, or in your collector stash.

Charred oak brings familiar notes of vanilla, toasted wood, caramelized sugar, baking spice, and a gentle smoky warmth. Meadowfoam already carries a natural marshmallow-vanilla profile, so the two do not fight for attention. They build on each other.

The result is a tasting experience that moves in layers:

This bourbon barrel-aged meadowfoam release follows that same philosophy. But let’s keep it accurate: the final bottling is still ahead of us. The honey has not been bottled yet. The specialty 12-ounce jar has been selected. The minimal labeling is still being finalized and ordered. So yes, the presentation is being handled with care, but no, I am not going to pretend the finished package is already sitting on a shelf ready to go.

How to taste bourbon barrel-aged meadowfoam honey

Do not start with a giant spoonful. This is specialty honey, not a race.

Try it this way:

  1. Let the honey rest at room temperature. Cold temperatures mute aroma and texture.
  2. Use a small spoon. A tasting spoon or clean teaspoon is perfect.
  3. Smell before tasting. Look for vanilla, toasted sugar, warm wood, and meadowfoam’s soft confectionery character.
  4. Let it sit on your tongue. Notice what arrives first and what stays longest.
  5. Taste it again with a plain cracker or piece of warm bread. The food will show you a different side of the honey.

For pairings, start with foods that can stand beside the honey without shouting over it:

  • Aged cheddar or gouda
  • Brie, burrata, or whipped ricotta
  • Warm sourdough
  • Vanilla ice cream
  • Roasted pears or apples

We are not publishing a made-up release date, inflated countdown, pretend inventory number, or exact final availability promise. The clearest message is the honest one: the honey is still being prepared for release, it has not been bottled yet, only a portion of the batch is being opened for early access because the balance is reserved for gifting and events, and the specialty 12-ounce jar has been selected while minimal labeling is still being finalized.
